As a kid, one of my favourite casual dining restaurants in Werribee, Victoria, Australia in the 90s was The Lone Star Steakhouse & Saloon. This was a Texan style saloon or roadhouse themed restaurant. It focused on steaks, burgers, seafood and salad.
To me, Lone Star Steakhouse seemed very well themed to me as a kid, looking like something out of a cowboy movie with heavy wooden decor, booths and a massive mural of a cowboy on a bull on the feature wall. Most importantly, they had free peanuts at the tables which you had to crack open yourself and got to throw onto the ground.
I don’t know if this is true, but someone told me that the oil from the peanut shells was good for the wooden floor. I remember it being a little slippery but found the novelty of throwing your rubbish on the floor to be very fun. Understandably, this was no longer allowed after a certain period as too many people with allergies must have had reactions. One of my friends on Facebook said that they heard that the peanut shells also attracted mice.
History of the Lone Star Steakhouse & Saloon in Australia
This Texan-themed restaurant franchise started in 1989 in Winstem-Salem, North Carolina. It was founded by Jamie B. Coulter, who was well experienced in the restaurant business, being a major franchisee of Pizza Hut restaurants. The brand then spread to other states excluding Texas itself and arrived in Australia in 1993 in Paramatta, NSW. Over 7.5 years, Lone Star reached 21 stores across Australia.
At its peak in 1998, it had 267 restaurants worldwide. In Australia they closed 10 restaurants in the year 2000, I think this is when my Werribee location closed. In 2003, the American parent company sold the 11 Australian locations that were still going across NSW, Victoria and Queensland to Robert LaPointe and Tim Smith.
It closed down in Australia in 2011. There is currently only 1 restaurant left in the world located in Tamuning, Guam.
Former Lone Star Locations in Australia
According to a now archived article from Inside Franchise Business in 2010:
Outback Jacks Bar & Grill, the franchise steakhouse chain, has signed an agreement to acquire the five Lone Star outlets across Sydney over the next 12 months.
Colby Smith, general manager of operations, told Franchising “Outback Jacks is expanding across Sydney by taking over all of the remaining Lone Star stores, such as Blacktown, Chullora, Warwick Farm, Tuggerah & Glendale. The sites will remain operating as Lone Star until OBJ’s secures a franchisee where we will then completely re-badge both the interior and exterior of the stores as Outback Jacks.”
Smith believes this is a great opportunity for Outback Jacks to expand into the Sydney market.
The franchise network’s growth has been concentrated on Queensland (now with eight operating stores with the 9th store opening 20th April and 10th by next month), South Australia with two stores operating and now fitting out a third and Western Australia, which has three stores trading.
“When we take over these five locations that will bring us to 25 stores Australia wide in just four years. By taking over these locations we can see how they are currently trading and can see the potential and the success that Outback Jacks will have in these sites.
“We expect Sydney to be one of our strongest and most successful states,” added Smith.
Prospective franchisees can expect to pay from $600,000 for one of these turn-key franchise opportunities.
Lone Star Rib Houses
Other locations became Lone Star Rib Houses, which do not appear to be affiliated with the original franchise and I cannot find much information about their history, I assume that one or more old franchisees who wanted to keep going under a new name and rebranded. Apparently, they do the free peanuts thing here again. This might be a good place to check out if you want to attempt to relive the Lone Star experience if you’re in Australia without going to Guam.

Lone Star Werribee, Victoria
My local Lone Star Steakhouse was located on the corner of Derrimut Rd and Waringa Crs, Werribee VIC 3030. After it closed, it eventually became an Italian style family restaurant called Di Caprio’s which lasted more than 20 years but that closed down in 2021 as the land was sold and redeveloped.

Here you can see the inside of the Di Caprio restaurant which retains the bar and function room. Plus the heavy wooden seating is likely the same as what was used at Lone Star. You can also see one of the feature wall paintings that has been adapted for their Italian theme.
Lone Star Steakhouse & Saloon Australian Corporate History

When Jamie Coulter recognised the potential for Lone Star Steakhouse & Saloon he called Bob Lapointe as they had shared a long and successful association over many years as KFC and Pizza Hut franchisees.
Bob Lapointe, with his son Rob, visited Jamie and Lone Star Steakhouse and Saloon in the US and immediately saw the potential for Lone Star in Australia and they were excited about it. With Rob Lapointe as General Manager, they opened the first Australian Lone Star Steakhouse & Saloon at Parramatta in January 1993.
There are 19 Lone Star Restaurants operating around the country employing more than 1,000 young Australians.
The beginning of 1998 saw Bob Lapointe assume the role of Managing Director, Lone Star Australia and Tim Smith is the National Operations Manager.
In New South Wales stores are located in the Sydney Metropolitan area at Parramatta, Penrith, Blacktown, Warwick Farm, Campbelltown and Chullora. North of Sydney there are restaurants at Tuggerah, in the Westfield shopping town and Glendale. South of Sydney there is a restaurant at Wollongong.
There are also 6 restaurants in Queensland at Aspley, Springwood, Toowoomba, Browns Plains, Rockhampton, Mermaid Beach on the Gold Coast, 4 in Western Australia at O’Connor, Belmont, Innaloo, and Maddington.
